Carved lemon pepper chicken breast & Why I ditched packaged lunchmeat


I like to cook enough of this chicken to last us at least a few days- paninis and salads are delishhh. One of the best parts: it’s husband-approved! My husband LOVES his sandwiches made with this and I don’t feel guilty serving it in our house!

Things we don’t need in our food: fillers, preservatives, nitrites/nitrates, added colors, high sodium, corn syrup.

Thing we need in our food: FLAVOR! This simple lemon pepper chicken recipe definitely fits the bill for this.

Ingredients in my carved lemon pepper chicken breast: 

Chicken breasts, lemon juice, black pepper, pinch of salt, 2 tablespoons organic extra-virgin olive oil.

Marinate chicken breast pieces with above ingredients- I only did this for a few minutes and it turned out great! Preheat your pan on medium heat, then throw the marinated chicken breasts in and let them sizzle until cooked, turning halfway through. Let cool, and then carve into slices.

Ingredients in our old lunch meat: 

Turkey Breast, Water, Modified Cornstarch, Sodium Lactate, Contains Less Than 2% of Salt, Sugar, Sodium Phosphate, Carrageenan (click here and scroll down to see why I don’t feed my family this specific ingredient), Sodium Diacetate, Potassium Chloride, Sodium Ascorbate, Sodium Nitrite.
